Darjeeling Style Jhol Momo Chutney (Soup) Recipe – Spicy & Flavorful!
Jhol Momo sirf momo nahi, ek complete experience hota hai – especially jab baat ho Darjeeling style ki! Iske chutney ya soup mein ek alag hi depth aur warmth hoti hai. Aaj hum banayenge ek authentic jhol momo chutney jo ghar par easily ban sakti hai!
Ingredients:
5 tbsp soybeans
5 tbsp sesame seeds
2–3 tbsp peanuts (optional)
3 tbsp oil
1/3 tsp cumin seeds (jeera)
Thoda sa Sichuan pepper (timur)
3–4 dry red Chillies
1-inch piece ginger (cut)
5–6 cloves garlic
1 small onion (chopped)
1–2 medium tomatoes (chopped)
1 tsp red chilli powder
1/2 tsp turmeric powder
Salt (as per taste)
Water (for blending)
Step-by-Step Recipe:
1. Dry Roast Soybeans: Sabse pehle 5 tbsp soybeans ko ek pan mein medium flame par dry roast karein. Lagbhag 10–15 minutes tak bhunein jab tak unki skin crack hone na lage. Ye process patience se karein – yeh chutney ka base banayega.
2. Dry Roast Sesame Seeds: Soybeans ke baad, usi pan mein 5 tbsp til (sesame seeds) ko bhunein. Jab iska color halka golden ho jaye, turant utar lein — over-roast na karein warna kadwa ho sakta hai.
3. (Optional) Roast Peanuts: Agar aapko peanuts ka thoda nutty texture pasand hai, to 2–3 tbsp moongfali bhi halka sa bhun lein.
4. Prepare Tempering (Tadka): Ab ek pan mein 3 tbsp oil garam karein. Usme daalein:
- 1/3 tsp jeera (cumin seeds)
- 1-inch adrak ka tukda (cut)
- 1 small pyaaz ( onion chopped)
- 1–2 medium tamatar ( tomatoes chopped)
- 1-2 tbsp nimbu (Lemon juice)
Is mixture ko achhe se bhunein jab tak sab kuch soft aur cooked na ho jaye. Tomato aur onion achhe se mix ho kar gravy jaisa ban jayein.
5. Add Masala: Jab sabziya soft ho jayein, tab add karein:
- Namak swaad anusar (salt)
- Sab ko mix karke ek aur minute tak cook karein.
6. Cool & Blend: Jab mixture thoda thanda ho jaye, toh isme pehle se roast kiye hue soybeans, sesame seeds, aur peanuts daalein aur thoda paani daal kar grind karein. Paste bilkul smooth aur creamy hona chahiye.
Serving Suggestion:
Yeh spicy aur rich chutney ko ek bowl mein daal kar steamed momo ke saath serve karein. Is chutney ko jhol momo ke roop mein enjoy kiya jata hai – matlab momo ke upar is chutney ko generous amount mein daala jata hai jaise ek soup ho!
