Darjeeling ki narrow galliyan, chhoti-chhoti dukanein, khidkiyon se jhankti rangin topiyan aur muskurate chehre bas yahi toh hai hamara Darjeeling sab kuch ek alag hi sukoon deta hai.

Yahan ke log ek dusre se deeply connected hote hain. Sabke paas kahaniyan hoti hain – kisi ki Himalaya ki thandi hawaaon se judi yaad, toh kisi ki chai bagan ke kaam ki baat. Har ritu, har mood, har khushboo mein Darjeeling ka culture basa hai.

Yahan ki chhoti chhoti galliyan, rangin ghar, aur muskurate chehre – sab mein ek sukoon chhupa hota hai. Subah ka mist, dopahar ki halki dhoop, aur shaam ka chai time – har pal mein ek kahani basti hai.

Gundruk Kya Hota Hai?


Gundruk ek fermented green leaf hota hai, jo zyada tar mustard leaves, radish leaves ya spinach se banaya jaata hai. Ye Nepal, Darjeeling aur Sikkim ke local gharon mein kaafi popular hai. Isse sukhakar store kiya jaata hai, aur phir kabhi achaar, kabhi curry, aur kabhi soup ke roop mein use hota hai.

                    Gundruk ka Achaar Recipe - Darjeeling Style :


Yahan ek simple aur tasty gundruk achaar recipe hai jise aap ghar pe bana sakte ho:


Ingredients:


5 tbsp soybean (dry roast karo jab tak skin crack na kare)


5 tbsp sesame seeds (roast until color change ho jaye)


3-4 tbsp peanuts (optional – roast kar lo)



Masala ke liye:


3 tbsp oil


1/3 tsp jeera


Thoda sa sichuan pepper (timur)


Dry red Chillies


1 tbsp chopped ginger


1 tbsp chopped garlic


1 onion (finely chopped)


1 tomato (finely chopped)


1/2 tsp red mirch powder


1/4 tsp haldi


Namak swaad anusar (salt)


Final mein copped coriander leaves 



Method:


1. Soybean, sesame aur peanuts ko alag alag dry roast karo.



2. Ek pan mein oil garam karo.



3. Usme jeera, sichuan pepper, aur dry red chilli daalo.



4. Fir ginger, garlic, onion, aur tomato daal kar achhe se bhuno.



5. Mirch powder, haldi aur namak daal kar mix karo.



6. Sab kuch thanda hone ke baad mixie mein grind karo jab tak smooth paste ban jaye.



7. Gundruk aur yeh masala ache se mix karo – ready hai Darjeeling style ka authentic gundruk achaar!
