Darjeeling ki Hawaon Mein Basa Swad – Aaj Ban Raha Hai Gorkha Achaar!
Darjeeling - sirf ek jagah nahi, ek mehsoos karne wali vibe hai. Subah-subah jab badal pahadon ke beech se dheere dheere nikalte hain, aur ek cup garam chai haathon mein hoti hai, tab lagta hai ki zindagi yahin ruk jaye. Yahan ki hawa mein ek alag hi sukoon hai, aur logon ke dil mein mithaas.
Par Darjeeling sirf chai ke liye famous nahi hai — yahan ka khana bhi kuch kam nahi! Gorkha culture ka hissa hai wo swaad jo har bite mein ghar ki yaad dilaata hai. Aaj wahi swaad hamare kitchen mein phir se zinda ho raha hai… Gorkha achaar ban raha hai!
Mirch, adrak, timmur (wo khas Gorkha pepper), aur wo khas Pahadi touch — sab milke bana rahe hain ek aisa achaar jo sirf taste nahi, ek kahani bhi le aata hai.
Darjeeling Style: Aloo Ka Achaar
Aloo Wala Gorkha Achaar - Thoda Teekha, Thoda Chatpata, Pura Pahadi!
Yeh sirf ek simple achaar nahi yeh hai hamare pahadon ki kitchen se nikla ek flavour bomb! Jab aloo ke saath mix hote hain bhune hue peanuts, kurkure soybeans, aur taazey hare pyaaz ke patte, tab ban jaata hai ek aisa combo jo sirf taste buds ko nahi, dil ko bhi khush kar deta hai.Jab kisi shaadi, aur koi v festival hota hai hamare ghar mein ye achaar jarur maa banatein hai ya kabhi v parivarik bhoj mein aloo ka achaar banta hai, toh samajh lo ki khaane mein ek dum jaan aa gayi hai! Yeh achaar sirf side dish nahi hota - yeh Gorkha parivaron ke khaas moments ka hissa hota hai. Har ghar mein iska apna style hota hai, par ek cheez common hai swaad jo seedha dil tak jaata hai!

Har ingredient ka apna ek role hota hai:
Aloo — base aur soul
Peanuts — crunch aur richness
Soybeans — ek earthy twist
Onion leaves — freshness aur pahadi green touch
Upar se timmur, nimbu ka ras, sarson ka tel aur thoda pyaar bhara tadka!
Sab kuch ek saath milke banata hai ek aisa "Gorkha Achaar" jo har meal ke saath chhota lagta hai, lekin yaadon mein bada reh jaata ha.
Ingredients:
3 medium size ubley hue aloo – chhote tukdon mein kaate
1/4 cup bhune hue peanuts
2-3 tbsp bhune hue soybeans
1-2 tbsp bhune hue til (sesame seeds)
1-2 tbsp bhune hue ramtil (Niger seeds)- optional
1/4 cup onion leaves (hare pyaaz ke patte) – barik kaate hue
1 cup soaked & boiled white peas (matar)
1 pyaaz (onion) slice
2 tbsp sarson ka tel (mustard oil)
1 tsp timmur (Szechuan pepper)
1 chhota adrak- slice karkein
3 cloves garlic - slice karkein
2-3 hari mirch – barik kaati hui
2-3 small size ka tomatoes ( aag mein sekha hua)
1 tbsp nimbu ka ras (Lemon juice)
1 tbsp namak swaad anusar (Salt)
1\2 tbsp thoda jeera, turmeric, chilli aur dhaniya powder
Banane ka tareeka (Steps):
1. Boil aloo ko chhote tukdon mein kaat lo aur ek bade bowl mein daal do.
2. Usmein daalo bhune peanuts, bhune soybeans, onion leaves, aur roasted tomatoes.
3. Ek chhoti kadhai mein sarson ka tel garam karo. Jab tel garam ho jaaye, usmein adrak-lahsun k slice, hari mirch, turmeric power, lal mirch powder aur timmur daal ke halka sa bhuno.
4. Ye tadka ab aloo wale bowl mein daal do.
5. Upar se daalo jeera powder, dhaniya powder, namak aur nimbu ka ras.
6. Upar se thoda coriander leaves .
7. Sab kuch achhi tarah se mila lo, taaki har bite mein taste ka magic ho!
Serve karo:
Garam chaawal ke saath, roti ke saath, Sel roti ke saath ya sirf aise hi – har tareeke se yeh aloo achaar ek dum lajawab lagta hai!
Yahi Hai Hamare Ghar Ka Swad… Aloo Gorkha Achaar!
Darjeeling ki thandi hawa, Kanchenjunga ki jhalak, aur rasoi se aata hua achaar ka khushboo bhara swaad yeh sab milke banate hain ek aisa ehsaas jo sirf Gorkha culture nahi, ek pure lifestyle ko reflect karta hai.
