Darjeeling Style Spicy Aloo Dum Recipe : Pahadon Ka Asli Swad

"Darjeeling ka Aloo Dum: Taste jo dil jeet le!"



Darjeeling ki thandi hawaon mein, aur pahadi galiyon mein agar koi ek street food sabse zyada pasand kiya jata hai, to woh hai Spicy Aloo Dum! Thoda teekha, thoda masaledaar aur pura swad bhara ek garma garam plate aloo dum aur uss k saath mein bhuja  muri (puffed rice) ka maza hi kuch aur hota hai! Ye recipe mujhe meri maa se mili hai, jo har festival  mein or normal daily basis meh ye banati hai, har ek chhoti ya bade dukaan ho ya phir street pe ya bade bade hotel mein ho har ek milta hai  yeh recipe har pahadi ke dil kareeb hoti hai.

Darjeeling style : Aloo Dum




Ingredients:


Boiled potatoes


6 cloves garlic


Dried red chilies (according to your taste)


Little turmeric powder


Kashmiri laal mirch


Mustard oil


Salt to taste


Kalonji (Nigella seeds)

                                        
Chopped coriander leaves (optional)

Recipe :
How to Make It (Step-by-step):


1. Soak and Grind:

Sukhi lal mirch ko thoda pani mein bhigo do aur fir uska ek fine paste bana lo. Saath mein 6 garlic cloves bhi grind karo.


2. Boil Potatoes:

Aloo ko peel karke boil kar lo. Chaho toh thoda crush bhi kar sakte ho taaki masala achhe se chipke.

3. Heat the Oil:

Ek pan mein mustard oil garam karo. Jab thoda smoke aane lage, to kalonji daal do.


4. Add Paste & Spices:

Ab red chilli-garlic paste daalo. Saath mein turmeric, thoda Kashmiri lal mirch powder color k liye  aur namak bhi. Medium-low flame pe is paste ko tab tak bhuno jab tak oil separate na ho jaye.


5. Mix the Potatoes:

Boiled potatoes daal ke acche se mix karo taaki masala har aloo pe chipak jaye aur thoda gravy bananey k liye 1\2 cup water add karo ya phir Sukhi kha bana sakte ho  


6. Final Touch:

Optional - thoda chopped dhaniya daal ke garnish karo.

Tips & Twist:

Agar aur spicy chahiye toh 1-2 hari mirch bhi add kar sakte ho.

Thoda lemon juice last mein daaloge toh ek tangy twist aayega aur thoda chopped onion dal kar kha sakte hai.

Serve It With:

 Is aloo dum ko Momo ke saath, Paratha ke saath, Maggi, Wai Wai, Mimi, Puri, (chapatis)  Sel Roti ya sirf chai ke saath bhi enjoy kiya ja sakte hai!
